Gluten Free Chocolate Cupcakes for Two



Enjoy these gluten-free chocolate cupcakes for two as a romantic dessert or as a special treat with a friend. They taste great, are moist, and are rich.

Ingredients:

  • 1/4 cup gluten-free flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup milk dairy or non-dairy
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon instant coffee optional
  • 1 egg
  • 2 tablespoons chocolate chips optional

Instructions:

Warm your oven up to 350F 175C and put paper liners in two cupcake tins

Mix the cocoa powder, baking powder, salt, and gluten-free flour in a small bowl with a whisk

Add the granulated sugar, melted butter, milk, vanilla extract, egg, and instant coffee if using to a different bowl

Use a whisk to mix the ingredients well

Mix the dry and wet ingredients together until they are just mixed

Be careful not to mix too much

If you want more chocolatey goodness, fold in the chocolate chips

Put the same amount of batter in each of the two cupcake liners

After the oven is hot, bake the cupcakes for 15 to 18 minutes, or until a toothpick stuck in the middle comes out clean

Take the cupcakes out of the oven and let them cool for a few minutes in the pan

Then, move them to a wire rack to cool completely

If you want, you can frost the cupcakes with your favorite gluten-free frosting after they are cool
