Crockpot Cock-a-Leekie Soup

Ingredients:
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 6 cups chicken broth
- 4 leeks, white and light green parts only, thinly sliced
- 4 carrots, peeled and diced
- 2 celery ribs, diced
- 1 cup pearl barley
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley, for garnish optional
Instructions:
In a slow cooker, combine chicken pieces, chicken broth, leeks, carrots, celery, pearl barley, dried thyme, salt, and black pepper
Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender
Taste and adjust seasoning if necessary
Serve hot, garnished with chopped fresh parsley if desired
