Crockpot Cock-a-Leekie Soup



This Crockpot Cock-a-Leekie Soup is a hearty and warming dish that is great for cold days. It has tender chicken, healthy vegetables, and pearl barley that have all been cooked in a tasty broth. This slow cooker meal is simple to make and tastes great. The whole family will love it.

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 6 cups chicken broth
  • 4 leeks, white and light green parts only, thinly sliced
  • 4 carrots, peeled and diced
  • 2 celery ribs, diced
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley, for garnish optional

Instructions:

In a slow cooker, combine chicken pieces, chicken broth, leeks, carrots, celery, pearl barley, dried thyme, salt, and black pepper

Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender

Taste and adjust seasoning if necessary

Serve hot, garnished with chopped fresh parsley if desired
