Satay Chicken Kabobs
You can enjoy grilled chicken in a tasty and flavorful way with these Satay Chicken Kabobs. The peanut butter marinade gives the food a rich, savory, and slightly spicy flavor. It's great for a summer barbecue or a quick dinner during the week.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions:
In a bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, turmeric, and cayenne pepper to make the marinade
Thread chicken pieces onto the soaked wooden skewers
Brush the chicken skewers with the marinade, making sure to coat them evenly
Reserve some marinade for basting
Preheat a grill to medium-high heat and oil the grates
Grill the chicken skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks
Baste with the reserved marinade during grilling
Serve the Satay Chicken Kabobs hot with your favorite dipping sauce or over a bed of rice
