Vegan Deviled Potatoes
A tasty change from the usual deviled eggs are these vegan deviled potatoes. They're creamy and sour, and they're great as an appetizer or side dish for any event.
Ingredients:
- 10 small potatoes
- 1/4 cup vegan mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Paprika, for garnish
- Chopped chives, for garnish
Instructions:
Boil the potatoes until tender, about 15 minutes
Drain and let cool slightly
Cut the potatoes in half lengthwise and scoop out a small amount of flesh to create a hollowed-out well in each potato half
In a bowl, mix together the vegan mayonnaise, Dijon mustard, lemon juice, salt, and black pepper
Fill each potato half with the vegan mayonnaise mixture
Sprinkle paprika and chopped chives over the filled potato halves for garnish
Refrigerate for at least 30 minutes before serving
