Vegan Salted Caramel and Chocolate Swirl Popsicles



Indulge in these creamy and delicious vegan popsicles with the perfect blend of salted caramel and chocolate. They're gluten-free and perfect for a summer treat!

Ingredients:

  • 1 can 13
  • 5 oz coconut milk
  • 1/2 cup almond milk
  • 1/2 cup pure maple syrup
  • 1/4 cup coconut sugar
  • 1/4 cup dairy-free chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/4 cup almond butter
  • Popsicle molds and sticks

Instructions:

In a saucepan, combine coconut milk, almond milk, pure maple syrup, and coconut sugar

Heat over medium heat, stirring until the mixture starts to simmer

Once it simmers, remove from heat and stir in vanilla extract and 1/4 tsp of sea salt

Let it cool to room temperature

In a separate bowl, melt dairy-free chocolate chips in a microwave or on a stovetop double boiler until smooth

Divide the cooled coconut milk mixture into two equal portions

In one portion, whisk in unsweetened cocoa powder until well combined

This will be your chocolate layer

In the other portion, whisk in almond butter until smooth

This will be your caramel layer

Begin layering your popsicles in the molds

Start with a spoonful of chocolate mixture, followed by a spoonful of caramel mixture

Repeat until the molds are filled

Using a popsicle stick, gently swirl the layers to create a marbled effect

Insert popsicle sticks into each mold and freeze for at least 4 hours, or until solid

Before serving, melt the remaining chocolate chips and drizzle it over the tops of the popsicles

Sprinkle with a pinch of sea salt
