Quinoa Peanut Butter Fudgesicles



You can add a tasty twist to quinoa by making these rich and creamy peanut butter fudgesicles with it. These frozen treats are a guilt-free treat for anyone who loves dessert. They are full of protein and have a hint of nutty flavor.

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond milk
  • 1/4 cup chopped nuts optional

Instructions:

In a blender, combine cooked quinoa, peanut butter, honey or maple syrup, cocoa powder, and vanilla extract

Blend until smooth, gradually adding almond milk until the mixture reaches a fudgesicle batter consistency

If desired, mix in chopped nuts for added crunch

Pour the mixture into fudgesicle molds or small cups with popsicle sticks

Freeze for at least 4 hours or until solid

Once frozen, run the molds or cups under warm water for easy removal
