Vegan Chickpea Tikka Masala GF
This Vegan Chickpea Tikka Masala is a flavorful and comforting dish that's perfect for a cozy night in. Packed with protein-rich chickpeas and aromatic spices, it's a hearty and satisfying meal that's also gluten-free.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 cup canned crushed tomatoes
- 1 cup coconut milk
- 1 tablespoon olive oil
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions:
Warm up the olive oil in a big pan over medium-low heat
Put in the minced garlic, chopped onion, and grated ginger
It will take about 5 minutes of cooking until the onions are soft and clear
Add the ground coriander, cumin, turmeric, paprika, and cayenne pepper, and mix them in
After two more minutes, the food should smell good
Put in coconut milk and tomato paste
Mix things together well
Add the chickpeas slowly and mix them in well
Add salt and pepper to taste
Leave the lid off and let it simmer for 15 to 20 minutes, or until the sauce gets thicker and the flavors blend
Add fresh cilantro as a garnish before serving
Hot rice or naan bread should go with it
