Grilled Vegetable Panini



This panini features a medley of grilled vegetables, flavorful pesto sauce, and melted provolone cheese, all pressed between slices of crusty sourdough bread.

Ingredients:

  • 4 slices sourdough bread
  • 1 zucchini, sliced lengthwise
  • 1 yellow squash, sliced lengthwise
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 cup baby spinach leaves
  • 1/4 cup pesto sauce
  • 4 slices provolone cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Warm up the grill or grill pan over medium-low heat

Use olive oil to coat the zucchini, yellow squash, red bell pepper, and yellow bell pepper

Then add salt and pepper to taste

About 34 minutes on each side, grill the vegetables until they are soft and slightly charred

Put pesto sauce on two sourdough bread slices

On top of the pesto, put grilled vegetables, spinach leaves, and provolone cheese

Add the last few slices of bread on top to make a sandwich

Use a panini press or a skillet to grill the sandwiches until the bread is golden brown and the cheese melts

Serve hot after cutting in half
