- 1 teaspoon vanilla extract
- 1/2 cup oat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- Cooking spray or oil for the pan
Instructions:
Put the eggs, maple syrup, vanilla extract, and pumpkin puree in a bowl and mix them together
Mix everything together well
Mix the baking soda, cinnamon, nutmeg, salt, baking powder, and oat flour together in a different bowl
Add the dry mixture to the wet mixture slowly while stirring it together until it is smooth and well mixed
Be careful as you add the dark chocolate chips to the batter
Put a nonstick griddle or skillet over medium-low heat and lightly coat it with oil or cooking spray
For every pancake, put 1/4 cup of pancake batter on a hot skillet
Once the top starts to bubble, flip it over and cook the other side until it's golden brown
Do it again with the rest of the batter
Eat your healthy pumpkin chocolate chip cookie pancakes while they are still warm and top them with your favorite things, like yogurt, fresh berries, or maple syrup
