Thai Peanut Chicken
Tender grilled chicken breasts glazed with a flavorful Thai-inspired peanut sauce, garnished with crunchy peanuts and fresh cilantro. This dish offers a perfect balance of savory, sweet, and spicy flavors, making it a delightful addition to your dinner table.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- 2 tablespoons chopped peanuts
- 2 tablespoons chopped cilantro
- Cooking spray
Instructions:
In a small bowl, mix together peanut butter, soy sauce, lime juice, honey, garlic, ginger, and red pepper flakes to make the sauce
Preheat grill or grill pan over medium-high heat, lightly coat with cooking spray
Season chicken breasts with salt and pepper, then grill for 6-7 minutes on each side until cooked through
During the last few minutes of cooking, brush chicken with the peanut sauce
Once cooked, remove chicken from the grill and let rest for a few minutes
Serve chicken topped with chopped peanuts and cilantro, with extra sauce on the side
