Vegan Carrot Ginger Soup



A creamy and comforting vegan soup with the vibrant flavors of carrots and ginger, finished with coconut milk for richness.

Ingredients:

  • 1 lb carrots, peeled and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups vegetable broth
  • 1 can 14 oz coconut milk
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions:

In a large pot, heat olive oil over medium heat

Add diced onion and saut until translucent, about 5 minutes

Add minced garlic and grated ginger, cook for another 2 minutes

Add chopped carrots to the pot and pour in vegetable broth

Bring to a boil, then reduce heat to simmer and cook until carrots are tender, about 20 minutes

Using an immersion blender or regular blender, blend the soup until smooth

Return the soup to the pot if using a regular blender

Stir in coconut milk and heat through

Season with salt and pepper to taste

Serve hot, garnished with fresh cilantro if desired
